- 1 (14 ounce) can black beans – rinsed and drained
- 1 (14 ounce) can corn - drained
- 1 red pepper – chopped
- ½ red onion – chopped
- 1 ½ teaspoon ground cumin
- 1 lime – juiced
- 2 tablespoons fresh cilantro – chopped
- 2 tablespoons olive oil
- Salt and pepper
Directions
Combine all ingredients in a bowl. Refrigerate and let stand for at least 30 minutes – giving time for the flavors to meld.
***This works great as both a side dish and as a dip with your favorite corn chips.
