Ingredients
- ½ cup canola oil
- 1 cup sugar plus sugar for rolling cookie dough
- ¼ cup molasses
- 1 egg
- 2 teaspoons baking soda
- 2 cups flour
- ½ teaspoon cloves
- ½ teaspoon ginger
- 1 teaspoon cinnamon
- ½ teaspoon salt
Directions
In one bowl combine canola oil, sugar, molasses, and egg. In a second bowl combine the remaining ingredients. Gradually add the dry ingredients to the wet, incorporating well (in the end this may work best by hand, as the cookie dough gets rather thick).
Chill cookie dough in the refrigerator for at least 30 minutes.
By hand, roll cookie dough into balls and roll in sugar, covering surface – batch should make approximately 24 cookies. Bake at 375 degrees for 8 to 10 minutes.
