Baked Banana Oatmeal Bars




















This breakfast favorite was adapted from Lynn's Kitchen Adventures.

Ingredients
  • 3 cups quick cooking oats
  • 1/2 cup brown sugar
  • 1 cup almond or soy milk
  • 2 tablespoons “butter”
  • 2 eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla
  • 3 bananas – mashed  

Directions
Mix all ingredients together and stir well. Spread in a greased 9×13 pan.

Bake at 350 for 20 to 25 minutes. Once cooled, separate into bars with a spatula. They bag up individually very well. Makes a great on-the-go breakfast.
