This recipe is adapted from the latest issue of one of my favorite food magazines: Saveur
- ¼ cup sugar
- ¼ cup white vinegar
- ¼ teaspoon salt
- 2 tablespoons fresh cilantro – chopped
- 2 shallots – sliced thin
- 1 cucumber – quartered lengthwise and sliced
In a medium bowl, combine sugar, vinegar, and salt and give a quick stir to dissolve. Add in remaining ingredients and toss to cover in the liquid. Let chill at least one hour before serving – allowing the flavors to meld.
